Easy Meatloaf

Usually when I think of meatloaf I do not think of a very exciting meal, but you can take something hum drum and make it wonderfully delicious.  My mom always made meatloaf when we were growing up and I can honestly say it was not my go to meal, of coarse it was good, but not my fave.

Living in a home with a teenage boy and almost teen girl, plus my husband I have some hungry mouths to feed.  They all need a hearty meal or they are hungry twenty minutes later.  So I like to make a meatloaf.

Most of the time you see a meatloaf with just one type of meat in it.  I like to make mine with different meats, meaning more than one.  You can also dress it up to be any style meatloaf you like.

The Basic recipe

1 lb ground beef (preferably grass fed)

1/2 lb mild Italian sausage

1 egg

1/2 c oatmeal (or bread crumbs)

salt and pepper to taste

Topped with ketchup

Preheat oven to 375 degrees. Mix all ingredients together well and form into a shapely loaf.  Artfully top with ketchup.  Bake for 1 hour and 20 minutes.

There are few easy changes that you can make to change it up a little;

Chorizo instead of Italian sausage

Ground Turkey of Chicken instead of ground Beef

Veggies- Italian (basil, tomatoes, olives, spinach, mushrooms) Italian seasoning

Veggies- Corn, red, green, yellow, peppers, black beans, jalapeños. Taco seasoning

Honestly you can make it any style you would like. It can even be put into tins to make mini meatloaves.  What ever your heart and stomach desire there is no limit to what you can do with a meatloaf.  Make it fun and make it yours.

  1. Ooh chorizo sounds amazing in this! Meatloaf is something I’ve always wanted to make but never really got around to it, like you say it’s not the most exciting meal. But I’ll definitely be trying it with the sausage 🙂 Thanks
